Wilton Benitez is a notable Colombian coffee producer renowned for his innovative approaches to coffee processing and production. Benitez specialises in experimental processing methods, particularly in fermentation techniques, which have garnered significant attention in the specialty coffee industry. This is a truly special and unique coffee that we have the pleasure of serving as our house coffee. The Castillo cherries have undergone anaerobic fermentation for 36 hours. During fermentation, a tailored yeast strain has been utilised specifically to enhance the coffee's natural flavour and fruity tasting notes, creating a delicious yet graceful cup.
