Benitez specialises in experimental processing methods, particularly in fermentation techniques, which have garnered significant attention in the specialty coffee industry. This is a truly special and unique coffee that we have the pleasure of serving as our house coffee. The Castillo cherries have undergone anaerobic fermentation for 36 hours. During fermentation, a tailored yeast strain has been utilised specifically to enhance the coffee's natural flavour and fruity tasting notes, creating a delicious yet graceful cup.
